Zucchini Parmesan Croquettes Recipe
These Zucchini Parmesan Croquettes recipe are crispy on the outside and moist inside with garlic and parmesan flavor. They’re a perfect appetizer, and you can have it with your favorite creamy dipping sauce.

HOW TO MAKE ZUCCHINI PARMESAN CROQUETTES
This recipe is a very simple batter of zucchini , egg, grated parmesan cheese, all-purpose flour, baking powder, onions, parsley, minced garlic, salt, ground pepper, cayenne, milk and breadcrumbs. Although they are fried they aren’t greasy.
- Wash, dry and shred the fresh zucchini. You can use food processor but I prefer to use a handheld cheese grater.
- Place the shredded zucchini into a large bowl and with a paper towel or a thin kitchen towel and squeeze as much water out as you can.
3. In a large bowl combine the zucchini, the spices, flour, minced garlic, salt, onions, baking powder, parmesan cheese, breadcrumbs, parsley and the egg and milk beaten together.
4. Stir everything all together until all ingredients are combined.
5. If the zucchini batter still too wet add more flour.
6. Scoop a 2 tablespoons of the zucchini batter and shape it the way you prefer or you can simply drop the zucchini batter into the pan or shape like Hamburger patties.
Next dredge the croquettes in bread crumbs. Turn to coat all sides well, pressing gently with your hands until the bread crumbs adhere.
Heat a frying pan over medium heat, add the oil. Don’t overcrowd the pan. Just make sure there’s a little bit of room around each zucchini parmesan croquettes so they can crisp properly. Fry the zucchini croquettes in batches until golden brown on both sides. About 3 minutes or so.
Remove the zucchini croquettes and place them on a plate lined with paper towel.

- 1/4 cup milk
- 6 tbsp grated parmesan
- 1/4 cup all-purpose flour
- 1/4 cup breadcrumbs plus more for dredging
- 1/2 cup canola oil
- black pepper
- cayenne
- parsley
