Welcome to Cassia’s Cuisine about page. My name is Cassia and I’m from Brazil. After a 14-year living in New York City, I am currently settled in the Pembroke Pines, Florida area.  

My home State is Minas Gerais an area with mountains, rivers, lakes and fertile land.  Minas is Brazil’s one of the producer of coffee, milk, and Minas has many farmhouses. The cuisine of Minas is nationally renowned, prepared using fresh, local ingredients, often using wood-fired brick ovens and clay and iron pans, which produces a distinctively taste and flavor in the food.  I’ll be sharing recipes from Minas and different parts of Brazil,  and other countries of the world.

As far back as I can remember, I’ve always loved to cook.  My first attempts as a young child were ambitious, if not always successful!  Back then my dear mother came to my rescue and taught me her methods.  Over time, the more I learned about cooking and improved my skills, the greater my passion. I started to cook more often when I came to the United States over 25 years ago.  The longing for the food and seasonings of my mother and sisters led me to search for those Brazilian ingredients.  Luckily, I lived in New York, where I was able to find Brazilian supermarkets in Queens that stocked what I needed.  In New York I found spices from all over the world, but what I always incorporated into my cooking was garlic.  You can say that the most important flavoring in Brazil is garlic, beautiful garlic, that when properly sauteed in olive oil, creates that sizzle and irresistible aroma that makes you feel hungry the moment it hits the pan.

After I met my husband, I started cooking more because he loves the Brazilian food.  Then came my beautiful daughter Alyssa. It is with great satisfaction that I can say my daughter never ate baby food purchased from a store.  I made all her baby food from scratch using fresh fruits and vegetables.  Over the years, as my life journey has taken me from Minas to New York to Florida, and as wife and mother, I have learned much more about great food, cooking, even some techniques and dishes from other countries.  One of my specialties is making delicious cakes and fillings.  Here on the blog you will see a diversity of dishes, from delectable main courses, savory snacks and appetizers, and satisfying sweets and tasty desserts.  No matter where you are from, whether you are Brazilian or not, I guarantee you will love my dishes.  You will find that although Brazilian food is delicious, it  can also be very healthy.  Each state of Brazil takes pride in their different specialties, which makes our Brazilian cuisine so varied and rich.  We have dishes that must be cooked slowly like our Famous and irresistible Feijoada, But it is worth the wait.  Brazilian food combines some of the best elements of European, native South American, African, Caribbean,  Mediterranean, and even Middle Eastern cuisines, producing its own varied cuisine that can be considered uniquely “Brazilian.”  

If you live in or near a major US city, you can probably find almost all the ingredients used in Brazilian cooking at a Brazilian supermarket.  If you don’t have one close, you may be able find suitable substitutes in a market that carries South American or Hispanic products, or even the local supermarket.   

My Mission

 I want to share my recipes and also show that you can make delicious food without leaving the comfort of your home, enjoy it with friends and family.  Cooking is not a seven-headed beast, but something anyone can do to achieve delectable dishes. While my goal is to teach you all how to make my recipes, I also want to learn myself. I will enhance this blog as I continue to learn new techniques and tricks in cooking.

I want to see my blog grow from just an idea to a flourishing site where many people are being inspired by my recipes and most importantly enjoying what they are making in the process. As I always say; everything is good when it is done with love and dedication.
