Banana Upside Down Cake
Banana upside down cake leaves its aroma in the whole house even before it comes out of the oven. It's very easy to make since the main ingredients are bananas and caramel sauce.

- 5 ripe bananas
- 3 eggs
- 1/2 cup oil
- 1/2 cup sugar
- 1 tbsp Baking powder
- 1 tbsp ground cinnamon
- 2 cups All-purpose flour
- 1/2 cup butter
- 1 cup Brown sugar
- 1/8 tsp salt
- 1 tbsp rum (Optional))
- 1 tsp vanilla
Preheat the oven to 350° degrees Fahrenheit.
Make the cake batter:
In a small bowl whisk the flour, baking powder, salt, and cinnamon together. In a separate bowl, mash the ripe bananas using either a fork or a potato masher. Set aside.
In a mixing bowl whisk the wet ingredients, the eggs one at a time, oil, vanilla, making sure to scrape down the sides of the bowl between eggs. Stir in the mashed bananas. Next add the mashed banana mixture into the dry ingredients, whisk just until combined. Don’t over mix. Make the Caramel Sauce:
Heat the 1/2 cup of butter, brown sugar, in a saucepan on the stovetop. Stir until the brown sugar has dissolved into the butter and the mixture bubbles. Remove from the heat and whisk in the rum ( Optional ). Spread the caramel evenly on the bottom of the greased cake pan, then place the sliced bananas.
Bake The Cake:
Pour the cake batter over the caramel and banana slices and spread evenly using a spatula. Bake for 40-50 minutes.
Let the cake cool for 10 minutes. Run a knife along the edges of the cake pan to release the sides. Using oven mitts carefully and firmly grip both the sides of the cake platter and the cake pan. Quickly flip over, so that the bottom of the cake is facing upwards, and set the cake on the platter and carefully remove the cake pan. Spoon excess caramel back over the cake, serve, and enjoy!
